Xanthan Gum

 

Xanthan Gum is a polysaccharide seacreated by the bacterium Xanthomonas campestris and is composed of five sugars.

Xanthan Gum is used as a food additive and rheology modifier, commonly used as a food thickening agent (in salad dressings, for example) and a stabilizer (in cosmetic products, for example, to prevent ingredients from separating). It is used to increase the viscosity of a liquid (such as drilling mud) as well as decrease high schear rates. 

Interesting Fact - Xanthan Gum is a common ingredient in fake blood and slime in the movie industry.
